This is absolutely true on almost all modern machines. However, on older mobos DMA being off for the slave device can affect the performance of the master one.
Since Sony 510 is certainly UDMA-2 compliant (my older Sony 500 is) it won't harm anyone if DMA was turned on for the Sony as well.
I won't repeat the formalities about 40-wire cables against 80-wire ones, as they are becoming rather tiring...

I succeeded in burning DVDs this week, but the buffer is still ranging from 30 to 97%. I realised that it is not very important since the written DVD are playing ok in the drive. The only problem is that even on 8X media, writing in 4X, it takes about 35 minutes to complete the burning. It's not normal! So I would like to know if it's related with the fact that my Burner is in Ultra DMA 2 instead of Ultra DMA 4? If so, how can I change that?!

4 speed should be around 15 minutes; UDMA2 isn't the hinderance, it's even fast enough for 16 x;
What absolute burning speed reports Nero while burning? Nero may speed down automatically for media compatibility reasons;

as scarecrow wrote above: enable DMA for the Sony too; it may effect the master device (LG) too;

beside that, i can't see anything suspicious in your log file;
