ripping a dvd-r to mp3

i have 1 or 2 dvd-r's of rock concerts.
how do you rip the audio only as i would like to burn the mp3's to disc ?

Demux the AC3 with DVD Decrypter, Smart Ripper, etc. Then downmix and convert it to mp3 using HeadAC3e or BeSweet.
