The major issue in encoding is the PROCESSOR performance.
The major issue in ripping is usually the speed of the DVD-ROM - if you have the luxury of a second hard drive, it may be more effective if used ONLY as a ripping drive.
Any ripping/recording process generates a signifigant sequential througput, and while the interleaving of RAID 0 can help the maximum value, a sustained and uninterfered with performance is more important.
If the available throughput from/to the HD is more than the DVD-ROM - increasing it will not make much difference.
