i think you don't need to do it all!
if you do an image of 98se with the demo,
and after one month the demo expire,
just restore the image and all is working again.
if don't,change the date,but i don't think that you need to change,cos the system see all new after restored,just like in the moment when you do a image.
if you have space in your hd,create a new partition and save your image and ghost.exe there.
when needed,you rboot in dos prompt and do a quick format
(don't need it too cos ghost delete all informations before the restauration) and after format c:\q
and without reboot or power off the pc,
change to the new partition d: ,
call ghost.exe and restore your system.
forgot all my "redundance".

a boot disquete is neede for emergences like :
