"How does priority work?

Priority is a small utility that sits on the taskbar watching for new programs
that are executed. Once a new program is executed, Priority sets the CPU priority for that program to high. This will happen to every program that is executed."

It works. All programs open noticeable faster, but what is the disadvantage\problem when setting priority for all programs to high? There must be one, otherwise it would be the deafult setting (I suppose).
 
Setting many program's priority to "high" or "realtime" may lock the computer very easily... just watch what happens when you use your favorite archiver (which runs by default at high priority) and try to compress at once 700+MB of data using high compression.
Some archivers (eg Winrar) resolve this issue by offering to operate at low priority instead (at the cost of speed, of course).
