Nero Vision Express 2 problems

When I capture video the size of the file is about 7gb for only 2 hours of footage. I am capturing from a composite source and the settings for capture are, DVD - standard quality. Why is this as the file should be about 4gb so it fits onto a DVD? When I then try to record the file to a DVD it has to reduce the quality for it to fit and takes about 3 hours and 2.5 hours of that is spent transcoding. Why is it doing this?

All I want to do is capture 2 hours video add menus etc and then record to a DVD. Each DVD should only take about 20 mins to write on an 8x writter. Is that correct?

Why does it take so long to transcode when writting a DVD if the file is in the correct format?

FYI Nero is recording with a bitrate of around 5000.

What software do you recomend then? I have and ATI 9800 AIW card and need to do a lot of capturing and burning to DVD?
