If my dvd player is at 16x how long should it take to rip and convert.

No idea whatsoever m8.

All depends on a myriad of variables. The DVD itself, the DVD-Rom drive, Chip, RAM, mobo, software used, encoding type you set etc, etc ,etc..........

The Rip part of the op is the quick bit and shold not take any longer than between 10-25 mins.

As Laz said but also greatly depends if you have DMA turned on for your DVDROM (and even HD), thats the biggest thing that influences ripping speed. Single layer DVD's rip faster than Dual layer DVD's as well.
