DVD2One&menus

for the time being, this will not be possible, without having to reencode the vob files DVD2One is doing.
DVD2One does not yet support backing up more than the movie itself. The programmer of this nice tool is thinking about implementing this feature in future releases.
But as it is now, the proggie does a fully automated reencoding of the movie and FILLS ALL SPACE TO 4,37 GB with the files it is doing. So you won't have space left to append the menu files without reencoding those files, which would be a hell of a work not worth. Even if you would have the space, it would be not that simple to make itt, since it would require you to reauthor the ifo files. This is pretty tricky if you're a beginner in this field, what I assume from your question.

If you want a backup with menus and all the other stuff on the original, here is what I do, but in very short description:
- Ripping in file mode ALL the files with DVDDecrypter
- demultiplex with DVD2Avi the movie part
- transcode with TMPGEnc Plus (taking care of how much the new VOB files may take up)
- author with IFOEdit a new DVD with the new transcoded m2v file (adding chapters, languages and subtitles)
- Moving the new VOB files in place of the original
- using IFOUpdate to update the original ifo files , so as to correctly address the new VOB files
- checking with IFOEdit if it plays in its DVDPlay feature
-if yes, then I burn the disc

Note: by keeping all the stuff on the disc I'm sacrificing some quality of the video - this is the case ONLY if the menu or the extras are worth to keep; I had only ONE disc where it was worth keeping the menu and I did it for me.

Also, you should wait for the program InstantCopy from Pinnacle which should be released in the first half of february. Rumours are that it will be able to fit a COMPLETE DVD-9 on one DVD-5. Let's wait and see which will be the (quality) compromise ....
