If you don't need all the multi-tracking capabilities then you might be better off getting Soundforge or Wavelab for straight forward professional recording / audio editing.

No, you don't need plugins to record.

Connect to your line-in, start your source, click on the
record button, recording should start. Make a test run
first and check volume levels to prevent overdriving and
      distortion.

Plug-ins are for later. For example, when recording from
      a tape source, I always allow a 2 or 3 second lead-in of
silence from the tape to use to get a "noise-print" for the
      noise reduction plug-ins.

No you don't need any plugins. I used to record from LPs (gave up cause it was a time consuming fuss removing clicks and pops) using my turntable,my amplifier and a mini-jack to mini-jack cord (from the headphones of the amp to line-in of my soynd card). Posssibly there are other ways but it was that simple for me.

All this edition audio software record the signal it takes from the audio card, no matter were the signal comes from, I mean the soundcard works as a mixer for all incoming sources (wave, onda, CD, aux line, line in or others), and that's what the software will record. Just be carefull about the level recording not too low (background dirty sound) not too high (cause distortion). And you don't need for this funtion any extra plug-ins. You will need for other funtions deppending of the software you use, like may be to remove pop and cliks from the original recorded wav.

still sounds a bit distorted with some tapes but that might be the way they were recorded in the first place
